Preparation and Evaluation of Blended Amla (Emblica officinalis Gaertn) Beverages

Freshly harvested fruits of three Amla cultivars viz., Krishna, Chakaiya and Kanchan were evaluated for the average weight fruit. Krishna showed highest (39 g) followed by (31g) (25g). The total soluble solids (TSS) pulp determined using a hand refractometer. TSS content ranged from 9% to 14.5%. moisture freshly cultivars, determined. 86% 90%. ascorbic acid in amla fruit 351mg/100g 270 mg/100g.
